- Ingredients for achari masala:
- Nigella seeds 1 tsp
- Mustard seeds 1 tsp
- Fennel seeds 1 tsp
- Coriander seeds 1 tbsp
- Cumin seeds 1 tbsp
- Ingredients for eggplant:
- Eggplants 500g
- Salt to taste
- Fenugreek seeds 1/2 tsp
- Red chili flakes 1 tsp
- Red chili powder 1 tsp
- Turmeric powder 1/4 tsp
- Tomatoes (chopped) 1 cup
- Onion (Chopped) 1 cup
- Oil 1/2 cup
- Ginger garlic paste 1 tbsp
- Vinegar 1 tbsp
- Directions:
- Step 1: In a pan dry roast coriander seeds, cumin seeds, nigella seeds, mustard seeds and fennel seeds for one minute.
- Step 2: Add all the roasted spices in a grinder and grind until you get a fine powder. Your achari masala is ready.
- Step 3: Cut eggplants into four pieces and soak in water with vinegar for 10 minutes.
- Step 4: Strain the eggplants and sprinkle 1 tablespoon of achari masala.
- Step 5: Heat oil in a pan, add onion and cook until translucent.
- Step 6: Add ginger garlic paste in it and cook it for a minute.
- Step 7: Then add tomatoes and cook for 2 to 3 minutes.
- Step 8: Add salt, fenugreek seeds, red chili powder, red chili flakes, turmeric powder, one tablespoon of achari masala and cook for a minute on medium low flame.
- Step 9: Add soaked eggplants in it and cook on low flame for 10 to 15 minutes or until tender.
- Your tasty achari baingan are ready to serve.
