  • Achari Bengan Recipe
  • Ingredients for achari masala: 
  • Nigella seeds 1 tsp 
  • Mustard seeds 1 tsp 
  • Fennel seeds 1 tsp 
  • Coriander seeds 1 tbsp 
  • Cumin seeds 1 tbsp 
  • Ingredients for eggplant: 
  • Eggplants 500g 
  • Salt to taste 
  • Fenugreek seeds 1/2 tsp 
  • Red chili flakes 1 tsp 
  • Red chili powder 1 tsp 
  • Turmeric powder 1/4 tsp 
  • Tomatoes (chopped) 1 cup 
  • Onion (Chopped) 1 cup 
  • Oil 1/2 cup 
  • Ginger garlic paste 1 tbsp 
  • Vinegar 1 tbsp
  • Directions: 
  • Step 1: In a pan dry roast coriander seeds, cumin seeds, nigella seeds, mustard seeds and fennel seeds for one minute. 
  • Step 2: Add all the roasted spices in a grinder and grind until you get a fine powder. Your achari masala is ready.
  • Step 3: Cut eggplants into four pieces and soak in water with vinegar for 10 minutes. 
  • Step 4: Strain the eggplants and sprinkle 1 tablespoon of achari masala. 
  • Step 5: Heat oil in a pan, add onion and cook until translucent. 
  • Step 6: Add ginger garlic paste in it and cook it for a minute. 
  • Step 7: Then add tomatoes and cook for 2 to 3 minutes.
  • Step 8: Add salt, fenugreek seeds, red chili powder, red chili flakes, turmeric powder, one tablespoon of achari masala and cook for a minute on medium low flame. 
  • Step 9: Add soaked eggplants in it and cook on low flame for 10 to 15 minutes or until tender. 
  • Your tasty achari baingan are ready to serve.
