Anda Tikki Recipe
Ingredients for tikki:
Split chickpea 1 cup
Salt to taste
Turmeric 1 tbsp
Black pepper 1 tbsp
Garlic cloves 4
Coriander seeds 2 tbsp
Cumin seeds 1 tbsp
Whole red chilies 10-12
Egg 2 (beaten)
Ingredients for anda masala:
Egg 1
Oil 2 tbsp
Onion (chopped) 1 cup
Tomatoes (chopped) 1 cup
Green chilies 2-3
Red chili powder 1 tsp
Salt to taste
Fresh coriander for garnish
Directions:
1. In a bowl add lentil and soak it overnight.
2. Then in a pan add water, soaked lentil, turmeric, black pepper, garlic cloves, coriander seeds, cumin seeds, whole red chilies and boil for 40 to 45 minutes or until lentil is 85% cooked.
3. Let the mixture cool down completely. Add mixture in a blender and blend until smooth thick paste form. Take mixture and make round kabab.
4. Heat oil in a pan, dip kababs in egg and fry until light golden brown from both sides.
5. Then on a flat pan heat oil, add onion and cook until translucent for 3 to 4 minutes. Add tomatoes, green chilies, red chili powder, salt and cook masala for 5 to 6 minutes.
6. Then add one egg in masala and cook for 2 to 3 minutes. Lastly add tikki and mix all the masala until well combined.
7. Garnish with fresh coriander and serve tasty anda tikki with roti and raita.

Cooking time: 50 minutes
