Tortilla Crust Pepperoni Tart
Ingredients for filling:
K&N’s Pepperoni 588g
Tortilla as required
Pasta sauce as required
Cheddar cheese as required
Ingredients for sauté veggies:
Olive oil 2 tbsp
Carrots (chopped) 1 cup
Sweet corn 1/2 cup
Capsicum (green) 1 cup
Olives 1 cup
Salt to taste
Black pepper powder 1/2 tsp
White pepper powder 1/4 tsp
Brown sugar 1 tsp
Ingredients for egg mixture:
Egg 2
Cream 1/4 cup
Cheddar 1/2 cup (grated)
Parsley fresh (chopped) 2 tbsp
Thyme fresh (chopped) 1/2 tsp
Black pepper 1/2 tsp
White pepper 1/4 tsp
Salt to taste
Directions:
1. In a pan heat oil, then add carrots, sweet corns, capsicum and fry for a minute or two.
2. Then add salt, black pepper, white pepper, brown sugar and give it a good mix. Your sautéed veggies are ready, set aside for later use.
3. Take a bowl add eggs, cream, cheddar, parsley, thyme, black pepper, white pepper and salt. Mix all these ingredients well and your egg mixture is ready. Set aside.
4. Prepare K&N’s pepperoni as per the instructions on the pack.
5. Take two tortillas, cut them in half and place around the edge to seal your tart properly. Finally place another whole tortilla on top and secure your base.
6. Take a tart pan, light brush it with oil and then place one whole tortilla in base.
7. Spread pasta sauce in base evenly, top it with sautéed veggie and pour egg mix on top. Place prepared K&N’s pepperoni on the top of tart covering it properly. Sprinkle cheese on top and place rest of K&N’s pepperoni on top.
8. Preheat your oven, place tart in it and bake for 15 to 20 minutes at 180°C. Remove from oven let it cool a bit then transfer to your serving plate.
9. Cut it into slices and serve your delicious crunchy and creamy pepperoni tart.

Cooking time: 20-25 minutes
