- Dahi Puri Recipe
- Ingredients for dough:
- All-purpose flour 1cup
- Semolina 1cup
- Salt to taste
- Warm water for kneading (as required)
- Oil for frying
- Ingredients for green chutney:
- Mint 1cup
- Coriander 2 cups
- Salt to taste
- Lemon juice 3tbsp
- Hing 1/4 tsp (optional)
- Garlic Cloves 5-6
- Ginger 1 inch
- Green Chilies 3-4
- Cumin Seeds 1/2 tsp
- Ingredients for imli chutney:
- Imli ka pani (1cup Imli soaked in cups of warm water)
- Jaggery 1cup
- Cumin Powder 1tsp
- Red Chili Powder 1 tsp
- Black salt 1tsp
- Ginger grated 1/2 tsp
- Fennel powder 1tsp
- Raisins 1/4 cup
- Ingredients for filling:
- Potatoes (boiled) 1cup
- Chickpeas (boiled) 1cup
- Phulkiyan (soaked) 1cup
- Onion (sliced) 1cup
- Cabbage (shredded) 1cup
- Chaat Masala 1tsp
- Assembling:
- Green Chutney as required
- Imli ki chutney as required
- Prepared Salad as required
- Yogurt as required
- Chaat Masala as required
- Seviyan as required
- Pomegranate seeds as required
- Directions:
- 1.In a bowl add flour, semolina, salt, water as required and knead medium soft dough. Cover with a damp cloth and let it rest for 10-15 minutes.
- 2.In a blender add mint, coriander, salt, lemon juice, hing, garlic cloves, ginger, green chilies and cumin seeds. Blend into a fine paste. Add water if required and your green chutney is ready.
- 3.In a pan add tamarind water, jaggery and cook until jaggery is dissolved. Add black salt, chili powder, cumin powder, fennel powder, ginger and cook for 10-15 minutes or until it starts to thicken. Lastly add raisins, and cook for another 5-10 minutes. Take off the flames and let it cool.
- 4.Cut your dough into four parts and then roll one part into very thin sheet. Note: the thinner will be the sheet; the crisper will be the gol gappas.
- 5.Using a round mold cut into round shapes. Heat oil in a pan and fry each disk one by one, gently pressing it in the oil until it puffs up.
- 6.In a bowl, mix Boiled potatoes, boiled chickpeas, soaked phulkiyan, sliced onions and sliced cabbage and chaat masala.
- 7.Make hole in gol gappas and fill with salad. Top with green chutney, yogurt, chaat Masala, Imli ki chutney, sev, and pomegranate seeds.
- 8.Your Dahi Puri is ready, Garnish with fresh mint leaves and serve immediately.
