- Pepperoni Potato Cake
- Ingredients for marinara sauce:
- Tomato (puree) 2 cups
- Oil 2 tbsp
- Garlic (chopped) 1 tbsp
- Red chili flakes 1 tbsp
- Basil (fresh) 1 tbsp
- Salt to taste
- Black pepper powder 1/2 tsp
- Italian seasoning 1 tbsp
- Ketchup 1/4 cup
- Ingredients for mashed potatoes:
- Potatoes 1/2 kg
- Cheddar cheese 1 cup
- Black pepper 1 tsp
- Salt to taste
- Milk 1/2 cup
- Butter 2 tbsp
- Assembling:
- K&N’s Pepperoni 588g
- Mozzarella cheese as required
- Black olives (sliced) as required
- Sweet corn as required
- Green capsicum (sliced) as required
- Red capsicum as required
- Oregano for sprinkle
- Directions:
- 1. In a pan of slightly salted water add potatoes and boil until fully tender. Then add these boiled potatoes in a bowl and mash them well.
- 2. In a pan add butter, milk, cheese and mix it well until dissolved. Then add black pepper, salt, mashed potatoes and mix it well.
- Note: Make sure your potatoes are not very soft and mushy. Your mashed potatoes are ready. Set aside to let it cool.
- 3. Heat oil in a pan, add garlic and sauté it for a minute. Then add tomato puree, chili flakes, salt, black pepper, Italian seasoning and ketchup. Mix it well and cook on medium low flame for 15 to 20 minutes or until you reach your desired consistency. Lastly add chopped basil leaves and give it a good mix. Your sauce is ready, set aside.
- 4. Prepare K&N’s Pepperoni as per the instructions on the pack.
- 5. Take a round baking pan and grease it with oil.
- 6. Firstly spread a layer of mashed potatoes in bottom evenly and cover it with marinara sauce. Cover it with prepared K&N’s pepperoni by overlapping one pepperoni on the other.
- 7. Add another layer of mashed potatoes on top and cover it again with marinara sauce evenly. Cover with it mozzarella cheese, cut prepared K&N’s pepperoni in half and place on the edge of your pan making a border. Top it with olives, corns, green capsicum, red capsicum and sprinkle oregano and red chili on top.
- 8. Bake in preheated oven at 180°C for 5 to 6 minutes or until cheese melts.
- 9. Let it cool a bit, remove from pan and serve delicious pepperoni potato cake.
