  • Vegetable Strudel Recipe
  • Ingredients for phyllo pastry: 
  • Flour 3 cups
  • Hot water as required 
  • Vinegar 1 tsp
  • Salt 1/2 tsp
  • Lemon juice 1/2 tsp
  • Olive oil 1 tbsp
  • Ingredients for filling: 
  • Chicken 1/2 kg 
  • Carrots (cubes) 1/2 cup
  • Potatoes (cubes) 1/2 cup
  • Olive oil 1 tbsp
  • Onion (chopped) 1/2 cup 
  • Garlic (chopped) 1 tbsp 
  • Button mushrooms (raw) 1/2 cup
  • Kidney beans (boiled) 1/2 cup
  • Capsicum 1/2 cup
  • Broccoli 1/2 cup
  • Black olives 1/3 cup
  • Salt to taste 
  • Black pepper 1 tsp
  • Lemon juice 1 tbsp 
  • Directions: 
  • 1. In a bowl add flour, salt, olive oil, lemon juice, vinegar and mix well.
  • 2. Then add hot water and knead for 5 to 7 minutes into semi hard dough, Cover with damp cloth and rest the dough for about 10 to 15 minutes. 
  • 3. In a pan of boiling salty water add chicken cubes and boil until fully cooked.  Strain and set aside. 
  • 4. In another pan of boiling salty water add potato, carrots and let it boil until fully tender. Strain and set aside. 
  • 5. Heat olive oil in a pan and sauté onion, garlic for 2 minutes, Then add mushroom and sauté for 2 to 3 minutes.
  • 6. Add chicken, carrots, potatoes and cook for another 4 to 5 minutes on medium low heat. 
  • 7. Shift this mixture into a bowl, add broccoli, beans, black olives, capsicum, salt, black pepper, lemon juice and mix it all well. Your filling is ready. 
  • 8. Take the dough and cut into 14 to 15 parts, dust with flour and roll each portion into a paper like thin sheet. 
  • 09. Brush one sheet with melted butter, cover it with another sheet and brush it with butter again, Note: cover each rolled sheet with damp cloth.
  • 10. Repeat the process until you have six layers. 
  • 11. Spread the prepared filling in center of sheet and wrap it in loaf shape. 
  • 12. Place the loaf on baking tray and brush it again with butter. 
  • 13. Bake in a preheated oven at 160 degrees for 30 minutes or until light golden brown. 
  • 14. Cut it into slices, your tasty Vegetable Strudel Recipe is ready to serve.

  • Cooking time: 1 hour
